Once harvested, the Islay barley was hand malted on the Kilchoman malt floor, and gently turned twice daily by maltmen as it germinates. The green malt was then smoked using peat cut from the Cnoc Dubh peat banks, the thick peat smoke permeating each barley grain, creating the distinct smoky Kilchoman character.
This Aug 2021 release of the 11th Edition 100% Islay was born, bottled on site without colouring or chill-filtration, standing alone as Scotland’s only Single Farm Single Malt Scotch Whisky, 100% Islay – from barley to bottle.
The 11th Edition 100% Islay can trace its origins to the Kilchoman barley harvest of 2007, 2009, 2010 and 2011, grown in the fertile fields surrounding the distillery.
