Duncan Taylor Octave Premium Cambus 1991, 28 Year Old

This single grain from Cambus is part of Duncan Taylor’s Premium Octave series, which has undergone a second maturation in octave casks to refine the whisky, enhancing its colour, taste, form and character.

Built in 1813 by John Mowbray, the distillery had an uneventful life until 1914 when a large gale struck and a fire broke out engulfing the buildings. Luckily, the bonded warehouses were untouched saving gallons of whisky. Cambus did re-open till 1938 but it never reached its prime again and was closed in 1993. It is now being used as a cask-filling store and for bonded warehousing.

This single grain from Cambus is part of Duncan Taylor’s Premium Octave series, which has undergone a second maturation in octave casks to refine the whisky, enhancing its colour, taste, form and character.

The Octave Premium Range was launched in August 2019 showcasing years of maturation expertise in Octave casks, which are about 1/8th the size of a butt and each one creates around 80 to 100 bottles casks.

Tasting notes

COLOUR: Copper.

NOSE: Initially sweet and a touch of red fruits with lashings of burnt toffee and a hint of peat.

PALATE: Spicy and earthy notes mingle with a background of oak and menthol. Candied fruits emerging. Waxy with a silky mouthfeel.

FINISH: Toasted oak, dry wood balanced with toffee and ginger spices
